Cookie Dough Brownies

INGREDIENTS:

Brownie:

  • 4 organic, pastured eggs
  • ½ cup cold-pressed organic coconut oil
  • 1 cup organic unsweetened applesauce
  • ½ cup organic coconut sugar
  • 2 teaspoons organic vanilla extract
  • ½ cup organic raw cacao powder
  • 1 ½ cups organic whole wheat pastry flour OR gluten free flour
  • ½ teaspoon celtic sea salt

Cookie Dough

Chocolate Glaze

  • 1 cup organic chocolate chips
  • 1 tablespoon organic coconut oil

METHOD:

Brownie

  1. Preheat oven at 350*.
  2. In a large glass bowl combine the brownie ingredients in order listen and mix by hand well together.
  3. Pour brownie batter into a coconut oil greased 9x13 glass baking dish and bake at for about 30 minutes or until toothpick comes out clean.
  4. Remove from oven and let cool till lukewarm.

Cookie Dough

  1. In another medium glass bowl, whip butter with hand mixer.
  2. Add sugar, flour and milk till forms cookie dough like texture. (May need to adjust milk and flour ratios.)
  3. Spread cookie dough over lukewarm brownies.
  4. Place in fridge until set (about 1 hour).

Chocolate Glaze

  1. In a stainless steel pan, melt chocolate chip with the coconut oil over medium heat.
  2. Remove.
  3. Pour over cookie dough and tilt pan until all chocolate is covered the cookie dough surface.
  4. Chill in fridge overnight or at least 12 hours.

Cut into small squares and enjoy with a glass of Silk milk!
