Summer means an abundance of fresh organic fruits and vegetables including strawberries! Here’s one recipe your family will enjoy — Fresh Strawberry Jam! Perfect on a slice of ONE DEGREE BREAD or plant-based pancakes (recipe was in our March eNewsletter, make sure you receive them!)
2 cups sliced, fresh, local, organic strawberries
2 tablespoons organic chia seeds
1/2 teaspoon organic ground ginger
1/2 teaspoon organic ground cinnamon
fresh squeeze of lemon
1 teaspoon local, organic raw honey (optional) (note: not commercial honey)
- In a medium size non-toxic pan bring strawberries to a boil and then simmer over medium heat for 10-12 minutes.
- Add chia seeds and mix well; cook for another 5-8 minutes.
- Remove from heat and add ginger, cinnamon, lemon and raw honey if desired. Stir together well.
- Pour into glass jars and store in refrigerator.
